How much does moisture affect breakage?
Greatly. Too-high moisture sticks and breaks when milling; too low causes broken kernels; optimal is about 13–14%, and must be uniform within a batch, otherwise soft and hard rice in one machine raises the broken-rice rate.
Does stronger polishing mean better appearance?
Not necessarily. Over-polishing breaks kernels and actually lowers head rice yield; balance required appearance against preserving head rice, reducing polish passes if needed.
